Saag Gosht (Spinach with meat)

SAAG GOSHT

INGREDIENTS:
1/2 kg mutton
1 small tomato
2 tomatoes, chopped
6 green chillies, chopped
8 green chillies, whole
1/2 kg spinach
1/2 cup oil
1/2  cup onion, browned
1 tbsp ginger paste
1 tbsp garlic paste
2 tsp chilli powder
2 tsp dry fenugreek leaves
2 tbsp coriander leaves
METHOD:
Finely chop the washed and blanched spinach and mix in the green
chillies, coriander leaves and tomatoes. Keep aside. In a pan; heat
oil and add the browned onions, ginger and garlic pastes and
chopped tomatoes. Then add the mutton with the salt, chilli powder
and 2 cups of water. Cover and cook until meat is tender. Add
the blended spinach mixture, whole green chillies and dry fenugreek
leaves. Fry well for 10 minutes. Remove from heat and
